Vino Amaro

A low-alcohol Italian-style red bitter — built with foraged Douglas fir tips, juniper from Jeb's family farm, and Oregon-grown saffron. Use it anywhere you'd reach for Aperol, Campari, or Cappelletti.

17% ABV · 750ml · Made in Portland

Concept

Tastes like Oregon.

We wanted to make the kind of classic red bittersweet aperitif we love to sip in the late afternoon — but built from where we actually live.

So instead of importing Italian botanicals, we forage them: Douglas fir tips from the Tillamook State Forest, juniper berries from Jeb's family farm in Prineville, yarrow from quiet meadows up and down the Oregon coast range.

The result is Vino Amaro: Ferrari red in color, herbal and bright on the palate, with notes of citrusy fir, jammy red berries, herbaceous juniper, a quiet lift of mint, and a clean, well-rounded bitter finish.

It's only 17% ABV — light enough to drink as a spritz on a Tuesday, complex enough to anchor a Negroni on a Friday.
What you'll taste

Bright, bitter, herbaceous.

Color: Ferrari red.
ABV: 17%
Sweetness: Low.

Drier than Aperol, less bitter than Campari.

Nose
Citrusy fir tips and crushed juniper. Quiet undertones of red fruit and a whisper of mint.
Palate
Jammy red berry up front, herbaceous juniper through the middle, a soft mint lift, and a finish that lands on a clean, well-rounded bitterness.
Finish
Long, dry, and balanced. The bitterness fades into the herbal botanicals rather than away from them. Refreshing rather than aggressive.
Botanicals

Made with thoughtfully-foraged and farmed botanicals.

01
Fir tips
Young fir tips add a citrus-like, jammy flavor and distinctive fir scent.

Carefully foraged in the late spring from areas near Tillamook, Hillsboro, and Vernonia.
02
Juniper berries
Western Juniper berries add an herbacious, lifting flavor and aroma.

Picked in Prineville, Oregon on Jeb's parents small farm by three generations of Hollabaughs.

03
Oregon Saffron
Saffron adds a velvety depth of flavor and a rich, Ferarri-red color.

Sourced from Golden Traditions, a small farm in North Plains, Oregon and one of the only local growers.
04
Pinot Blanc
Pinot Blanc provides a clean, low-alcohol base for infusing with botanicals.

Harvested and barreled in Southern Oregon. Jeb drives down to collect the wine.
